Kohlrabi and Cabbage Slaw

I am involved in a CSA farm program. Every week I pick up fresh organic vegetables. It is so much fun to try new recipes with all the fresh vegetables. Today I decided to create a slaw because we were invited over to a friend’s house for dinner after we played golf. I cut everything up ahead of time before we played golf. When I got home, I made the dressing, tossed and off to dinner I went. It was great!

Ingredients

2 large kohlrabi

½ of a cabbage

4 radishes

3 garlic scapes

Fresh cilantro

Dressing

¼ C olive oil

1 orange squeezed

1 lime squeezed

1/8 C raw organic honey

1 TBSP Apple Cider Vinegar

Sea salt

Instructions

Trim and peel kohlrabi and cut into matchstick pieces. Shred or cut the cabbage. Chop the radishes, cilantro and garlic scapes. Whisk dressing together in a small bowl. Toss with salad. Refrigerate until serving. This taste good the next day too!
